Red cabbage salad with oranges and dates-ready in 15 Minutes

Every now and then I feel like I need a quick winter salad—like an orange and red cabbage salad with dates, for example.

And for an extra crunch I simply add some chopped walnuts, that’s so delicious!

For me, this is the ideal winter salad because it is packed with vitamins and simply tastes soooo good.

What goes into the red cabbage salad?

Of course, first of all, red cabbage.

Then I add some oranges for freshness.

Add a few chopped dates for the sweetness and, as already mentioned, chopped walnuts for the crunch.

And then of course a quick dressing with ingredients that you always have at home. And if you don’t have any date vinegar, you can use a balsamic vinegar reduction as a substitute.

How is the salad prepared?

First, you have to cut the red cabbage into very fine strips. This is best done with a mandolin, but please be careful not to cut yourself. That can happen pretty quickly. Unfortunately, I know this from my own experience.

But otherwise I just don’t get the red cabbage slices as fine as with a mandolin. I’m always amazed. Add some salt and sugar to it and let stand for a while.

You need to fillet the oranges for the red cabbage salad, and then I use the juice and the orange fillets.

But that’s not as difficult as you might think. First cut off the two ends of the orange and then use a sharp knife to cut off the peel from top to bottom. It’s like being peeled off.

It is important that you also cut off the white of the skin. It tastes slightly bitter an, and I just don’t like it. 😉

Then you cut out the individual fillets from the orange chambers with a knife and the orange is already filleted and you have nothing but small orange fillets.

And then all I have to do is squeeze the juice from the rest of the orange and add it to the dressing, which I then finish right away.

All you have to do then is chop the walnuts and dates and sprinkle them on top.

And tada, your red cabbage salad is ready.

And that goes well with it:

Freshly baked bread or some goat cheese go great with it.

Ingredients

2 servings
400 g red cabbage
2 oranges
5 dates, pitted
1 handful of walnuts
1 tsp salt
1 pinch of sugar
1 pinch of pepper
10 ml white wine vinegar
20 ml sunflower oil
1 tsp Date Vinegar Alternative Balsamic Reduction

Utensils

  • mandoline

Steps of preparation

  1. In a bowl, mix the vinegar with the oil, pepper and date vinegar
  2. Cut the red cabbage into fine strips with a mandolin and add to the dressing
  3. Add salt and sugar, stir briefly and let stand for about 5 minutes. In the meantime:
  4. Fillet the oranges, add to the salad, and squeeze the rest of the orange over the salad.
  5. Cut the walnuts and dates into small pieces and add them to the salad
  6. Mix everything together well and enjoy!
