There are salads which you can eat at any time of the year. For me, this definitely includes a spinach salad with chickpeas.

It is so easy and quick to make and yet has a ingenious taste. My record in preparing this salad was under 15 minutes. Love it.

How does the salad get ingenious?

Quite simply, the spinach salad with chickpeas is joined by dates and, who likes, some roasted hazelnuts. They give the salad a delicious crunch.

What is the best way to clean the spinach?

The best way to clean the spinach is with a salad spinner if you have one. And otherwise in the sink with cold water and then shake the salad really dry. Because there’s nothing worse than making yourself a fancy salad and then gnashing your teeth because the spinach wasn’t cleaned well. Yes, this happened to me quite a few times 😉

Which dressing goes well with the spinach salad?

This is a very simple dressing, but I love it! Simplicity is key here. Just add olive oil, lemon juice, salt & pepper, and add some ground cumin for the special touch.

I always make the dressing separately. Of course, if I want to go even faster, I simply put all the ingredients over the salad and then mix it up. But it just tastes better when the dressing has been shaken well. I always use an old jam jar for this, these are ideal for shaking salad dressing.

And what would you recommend with it?

If I still have wholegrain bread at home, of course, a nice slice of it. But a lemon chicken from the grill is a match made in heaven.

Ingredients

2 servings
Salad
400 g chickpeas
200 g baby spinach
1 medium sized carrot
4 dates
OPTIONAL
40 g roasted hazelnuts
Dressing
juice of 1 lemon
4 Tbsp olive oil
1/2 tsp cumin
Salt & pepper

Steps of preparation

  1. Wash and spin dry the spinach
  2. Drain the chickpeas in a colander
  3. Peel and finely chop the carrot
  4. Cut dates into small pieces
  5. Put all the ingredients for the dressing in a sealable jar and shake well.
  6. Place the spinach, chickpeas, carrots, and dates in a salad bowl and toss with the dressing
  7. If you like, you can of course add roasted hazelnuts for that extra crunch.
