This Chicory Apple Salad is one of my all-time favorites. It works perfectly as a light lunch or as a side dish – especially when served alongside something warm and crispy like homemade chicken schnitzel.
The combination of sweet apple, slightly bitter chicory, and creamy dressing is simple but full of flavor. Whether it’s schnitzel, grilled chicken breast, pan-seared salmon, or just a fresh slice of crusty baguette – this salad pairs beautifully with just about anything.
But let me tell you – the Chicory Apple Salad is a super tasty salad!paired with chicken schnitzel, a wedge of lemon, and this salad? That’s a match made in heaven. The crisp, savory schnitzel and the refreshing salad are just meant to be together.
But wait… do you actually know Chicory?
Chicory (called Belgian endive in the U.S.) is grown in complete darkness – which is why the leaves are pale white with yellow tips.
In the supermarket, you’ll usually find it tucked away in a little wooden crate in the fridge, often covered – because light is its enemy. At home, store it in a damp kitchen towel in the fridge to keep it fresh.
It has a mild bitterness, which is what makes it so special. When prepping, just slice off the stem – that part tends to be a bit too bitter – and you’re good to go.
How to cut chicory
No stress here – it’s really easy:
- Slice each half into thin strips when preparing it.
- Wash the chicory
- Cut it in half lengthwise
- Remove the stem


What’s the secret to my Chicory Apple Salad?
Cream cheese and fresh orange juice. Yup – that simple. The creaminess of the cheese and the zing of citrus bring everything together. It’s refreshing, slightly sweet, a little bitter, and just… right.
Also important: the orange segments. These little juicy bits make the salad pop.
How to segment an orange (and not lose your mind doing it)
- Cut off the top and bottom of the orange
- Slice off the peel and white pith from top to bottom
- Once the orange is peeled, hold it in your hand and cut along the membranes to release each segment
- Don’t forget to squeeze the remaining orange for juice – I usually do it straight into the bowl 😌

Chicory Apple Salad- a super tasty salad!
Just a heads up: I use grams and Celsius degrees in all my recipes, as I’m based in Germany.
Equipment
- 1 knife
- 1 bowl
- 1 whisk
Ingredients
- 2 chicory/ Belgian endive
- 3 tbsp cream cheese
- 2 tbsp natural yoghurt
- 3 pieces oranges you will need the segments and the juice
- 1 piece apple cut into slices
- salt and pepper
Instructions
- In a big bowl, add the cream cheese and yoghurt and whisk together.
- Segment an orange and squeeze the orange pulp in the cream cheese and yoghurt mixture.
- How to segment an orange:
- Cut off the top and the bottom of the orange. Cut away the outer skin, from top to bottom. Once the outside skin (including white membrane) is removed, insert the knife between the side membrane and the meat of the orange. When the knife is between them, carefully pull the meat away from the membrane on both sides. Repeat until you have all the filets.
- Add the filets of the orange and squeeze the juice of the remaining of the orange to the yoghurt and cream cheese mixture.
- Wash the apple thoroughly and remove the stem from the fruit, cut in half from stem top to bottom. Then, cut the apple into slices.
- Add the apple cubes to the mixture and season generously with salt and pepper
- How to prepare the Chicory:
- Cut it in half first
- Remove the inside stem
- Then thinly slice it.
- Add the chicory to the mixture and fold it in.
- Let it rest for 10 minutes and enjoy!
