If you’re looking for a simple and delicious side dish that everyone will love, then I have the perfect recipe for you: crispy oven-roasted beets!

However, before I start, I have to confess two things:

  • the recipe comes from my mom.
  • And until now, I wasn’t really a fan of beets! But I find them extremely tasty this way, and they’re becoming my favourite side dish. 🙂 And since beets have such a dusty image, I’ve put together some facts for you.

So, let’s start:

How healthy are those beets?

Beetroot, also known as beets or beet, is not only super tasty but also has a lot of health benefits to offer! In my research, I found out quite a lot about these power balls.

Here are my top 5:

  1. Nutrient Power: Beets are the star when it comes to vitamins – from vitamin C to folic acid to vitamin B6. Plus, they’re packed with iron, manganese, and potassium.
  2. Antioxidant Boost: The betanin pigments in beetroot are not only responsible for the cool color but also act as powerful antioxidants. They help minimize cell damage and protect the body from oxidative stress.
  3. Focus on Heart Health: The nitrates in beetroot can help keep blood pressure in check and boost circulation – a real plus for heart health.
  4. Digestive Kick: With its richness in fiber, beetroot supports healthy digestion and keeps everything flowing smoothly.
  5. Immune System Booster: The vitamins and antioxidants in beetroot strengthen the immune system and help fight off diseases.

Wow, you see, integrating beetroot into your diet is definitely a pretty tasty and easy way to benefit from its health advantages. I’ll absolutely do it!

But first, how do I cook this superfood from the garden?

And here’s how I cook/bake beetroot:

  1. Prepare the beetroot: Start by peeling the beetroot. Please make sure to wear these rubber gloves, as the discolouration is hard to remove from your hands. *Here you can find some in black.
  2. Cut into wedges: Cut the peeled beetroot into uniform wedges. And put them in a large bowl.
  3. Season: Place the beetroot in a bowl and add the olive oil. Add a good pinch of salt and your thyme (but you can also use rosemary) to intensify the flavors.
  4. Arrange on the baking sheet: Make sure the wedges have enough space on the baking sheet to cook evenly and develop that wonderful crispiness while baking.
  5. Into the oven: Preheat the oven to 200 degrees Celsius and bake for about 40-45 minutes or until golden brown and wonderfully crispy. The tempting aroma will already make you look forward to the final result.
  6. Enjoy

After baking, you can serve your crispy beetroot immediately. This fabulous side dish goes well with many braised dishes, and will surely even please those who aren’t fans of beets. Like I said, I didn’t like them before… 😉

Ingredients

4 servings
5 beetroot, uncooked
2 TBS olive oil
a good pinch of salt
3 twigs of thyme or rosemary

Utensils

  • baking pan

Steps of preparation

  1. Preheat the oven to 200°C (fan). Line a baking sheet with parchment paper.
  2. Be sure to put on gloves now and peel the beets, placing them in a large bowl.
  3. Add olive oil, salt, and thyme (or rosemary) and mix everything together. The beets should be completely coated with oil.
  4. Place the beets next to each other on the baking sheet and bake in the oven for 45 minutes.
  5. After about 45 minutes, remove the beets from the oven and enjoy.
