Are you looking for a delicious summer salad with Burrata? Sort of like a Burrata salad? And then maybe grilled peaches to go with it?
Then I have just the right thing for you! A Burrata salad on rocket, with tomatoes and then grilled peach. Splendid. It’s like summer on a plate to me.
Plus maybe some bread, a glass of dry white wine, you know what I mean 😉
But what actually is Burrata?
Burrata is a form of mozzarella and originally comes from Apulia, Italy.
It’s made mostly from cow’s milk and looks like little gift bags, complete with a bow. But what makes it so special is his inner workings. It’s a mixture of cream and shredded mozzarella, which makes the filling slightly runny. Therefore, you should be careful when cutting those parcels, as the liquid runs out easily.
The flavour of Burrata is slightly sweeter than regular mozzarella due to the cream. And of course much creamier. Which comes across really well in the salad, as the whole Burrata salad is a tad creamy once you cut the Burrata. And it’s so good when you dip it with some homemade bread.

What’s in the Burrata salad?
In addition to Burrata, I also use rocket leaves, tomatoes and freshly grilled peaches in my salad. The dressing is also quick and easy to make, as it consists only of olive oil, balsamic vinegar and salt & pepper. The salad is not only delicious, but also on the table in no time at all, which I love.
If you don’t have a grill, you can of course roast the peaches in a (grill) pan. Then simply add some olive oil as well. The grilled peaches simply give a massive taste boost. You absolutely have to try this as it’s so good!

Burrata Salad

Cook time: 5 minutes -
Total time: 15 minutes
Ingredients
2 | Burrata à 150g |
2 | tomatoes |
2 | peaches |
300 g | rocket leaves |
4 | TBSP Olive Oil |
2 | TBSP Balsamic Vinegar |
Salt & pepper |
Utensils
- BBQ or BBQ Pan
Steps of preparation
- Remove Burrata from packaging and drain excess liquid
- Wash rocket & peaches. Quarter the peaches and lightly salt & pepper.
- Preheat grill
- While the grill is heating up, chop the tomatoes.
- Spread rocket and tomatoes on 2 plates. Place Burrata on top.
- Grill the peaches for about 2 minutes per side and then arrange on the plates
- Mix olive oil, balsamic vinegar, salt & pepper together and spread over the salads.
- Enjoy.
