Ingredients
  

  • 15 g fresh yeast
  • 27 g sugar
  • 450 ml water lukewarm
  • 660 g flour all purpose
  • 9 g salt
  • a dash oil

  • 1 tbsp sesame
  • 1 tbsp poppy seeds
  • everything bagel spice

Instructions
 

  • In a bowl, combine 180 ml of warm water with the sugar and yeast. Stir briefly and let it rest for 5 minutes.
  • 5 minutes.Mix the flour and salt together, then add the flour mixture to the yeast-sugar mixture.
  • Add 100 ml of water and knead everything together. Gradually add the remaining water, but be careful: you may not need all of it. The goal is to achieve a firm yet moist dough.Knead the dough for about 10 minutes.
  • Lightly oil a large bowl, place the dough inside, cover it with a kitchen towel, and let it rest for 1 hour.
  • Divide the dough into 12 equal portions. Shape each portion into a ball and use your finger to create a hole in the center of each ball. Let the bagels rest for another 10 minutes.
  • Meanwhile, preheat your oven to 200°C (392°F) and line two baking sheets with parchment paper.
  • Bring a large pot of water to a boil, then reduce the heat to a simmer.
  • Using a slotted spoon, place the bagels into the simmering water. Depending on the size of your pot, you can cook 2–4 bagels at a time.
  • After 1 minute, flip the bagels over and let them simmer for another minute before carefully transferring them to the prepared baking sheets.
  • If desired, sprinkle toppings like sesame seeds or poppy seeds onto the bagels.Bake the bagels in the preheated oven for about 20 minutes (at 200°C) until golden brown.
  • Remove the bagels from the oven and let them cool. Remove the bagels from the oven and let them cool.
