Spinach salad with chickpeas

Just a heads up: I use grams and Celsius degrees in all my recipes, as I'm based in Germany.

Ingredients
  

  • 400 g chickpeas
  • 200 g baby spinach
  • 1 medium sized carrot
  • 4 dates
  • OPTIONAL
  • 40 g roasted hazelnuts
  • juice of 1 lemon
  • 4 Tbsp olive oil
  • 1/2 tsp cumin
  • Salt & pepper

Instructions
 

  • Wash and spin dry the spinach
  • Drain the chickpeas in a colander
  • Peel and finely chop the carrot
  • Cut dates into small pieces
  • Put all the ingredients for the dressing in a sealable jar and shake well.
  • Place the spinach, chickpeas, carrots, and dates in a salad bowl and toss with the dressing
  • If you like, you can of course add roasted hazelnuts for that extra crunch.
