Hearty Lentil Stew with Sausages and Bacon

Just a heads up: I use grams and Celsius degrees in all my recipes, as I'm based in Germany.

Ingredients
  

  • 250  g lentils
  • 1  carrot
  • 1  onion
  • 80  g celeriac
  • 100  g leek
  • 20  g tomato paste
  • 1 ,5 tsp salt
  • 120  g bacon
  • 900  ml vegetable stock
  • 10  ml cooking oil
  • 25  ml red wine
  • 4  frankfurter sausages
  • Spices :
  • 2  bay leaf
  • 3  lovage
  • 3  juniper berries
  • 2  cloves
  • salt and pepper

Instructions
 

  • Start with cutting all vegetables in bite sizes.
  • Bring a big pot to high heat and add the oil.
  • Add the onions, celeriac, leek, and carrots and let it get some colour.
  • Add the lentils and the tomato paste.
  • Let it caramelize and then add the wine and stir occasionally for 1 minute
  • Pour in the vegetable broth and add the bacon and spices, except the salt.
  • Let it simmer on low heat for about 30 minutes.
  • When the lentils are cooked, add the salt and season to taste.
  • Add the Frankfurter sausages (Wienerle) and let it rest for 5 more minutes.
  • Season to taste and Bon appétit!
