Chimichurri made with carrot greens!

healthy chimichurri made from carrot greens. It’s perfect with a steak or some grilled chicken breast.

Just a heads up: I use grams and Celsius degrees in all my recipes, as I'm based in Germany.

Ingredients
  

  • Carrot greens (approx. 50g)
  • 1 red onion
  • 1 clove of garlic
  • 1 lime juice and zest
  • 1 jalapeno chili
  • 1 pinch of sugar
  • 50 ml olive oil
  • 1 tsp dried oregano
  • 2 tablespoons red wine vinegar

Instructions
 

  • Wash and dry carrot greens
  • Roughly chop the jalapeno
  • Peel garlic
  • Take some zest from the lime and squeeze it
  • Put all the ingredients, except the vinegar, in a blender and mix well
  • Add vinegar and mix
  • Leave to rest for about 20 minutes and then enjoy!
