Baking bread is definitely an art in itself, but there’s nothing better than fresh, crispy, homemade bread! And then a yogurt bread which is super juicy, some butter on it, and you are good to go! 🙂
And bread is one of those foods that simply tastes 10x better when it’s homemade. The crispy crust, the aromatic scent and the delicate taste make baking yourself a culinary adventure. And I am talking about the proper bread here, not sandwich bread. But I do admit, I enjoy that sometimes as well. 🙂
But if you think that baking bread is time-consuming, then let me introduce you to a recipe that will change your mind: a crusty yogurt bread that is allowed to ripen for about 16 hours and is baked in a pot with a lid. What is not time-consuming, but ripens in 24 hours? How does that come together? Quite simply, the working time itself is approximately 20 minutes. The rest is a wait and see. So you can prepare your dough in the morning, let it rest(rise) all day, fold and shape it in the evening and bake it in the morning.
Sounds tempting? Then let’s go straight to the kitchen!
The advantage of baking your own yogurt bread!
Before we dive into the preparation of yogurt bread, let me briefly mention why it is so worthwhile to bake your own bread. Aside from having complete control over the ingredients and flavour, there are of course other benefits.
And which one, you’re probably wondering now.
For starters, we know exactly what’s in it – and there are definitely no preservatives or unnecessary additives. This delicious yogurt bread has flour, (full fat) yogurt, a little yeast, salt and water as the ingredients. That’s it!
Homemade bread is also a great way to get children excited about healthy eating. My daughter, who is very picky about food and only used to eat sandwich bread, loves it now! Wohoo! Kids will taste and love the difference!
If that’s not enough of an advantage for you, then there’s the important factor of money.
The secret of the perfect crust lies in the long maturing process and baking the bread in a pot with a lid- I use a cast iron pot, which results in a perfect crust and a wonderfully airy interior. Why? Due to the steam it gets inside the pot. I tried the bread today in a normal baking form, and the bread was great, but it just did not have that amazing crust. So, if you have a cast iron, try it out and enjoy the delicious smell of fresh bread in your home!
Homemade bread is simply cheaper than one from a bakery. Fact. There are bakeries here in Vienna where an (admittedly great) loaf of bread costs around €7 at least.

But now to the part of baking your own bread!
It’s sooo easy! You take your ingredients, in this case flour, yogurt, a little yeast, salt and water and knead everything together.
And here comes the first trick: not just 1-2 minutes until everything is kneaded together, but really around 5-7 minutes. The dough is still a bit sticky, but already nice and supple and elastic.
Then cover with a kitchen towel and let it rest. After the 8 hours (also works well during the day or overnight) you have to fold the dough.
What to fold dough? What is that? What does it make?
So when folding the dough, the dough is basically folded from the outside in. The stretching and folding gives the dough structure, and this happens because the gluten strands in the bread basically form a network that gives the bread the important tension.
After folding, the bread goes into the *resting basket for the final rise.
And another tip: If you want to bake the bread during a heat wave, eg summer, please let the bread rest in the refrigerator. Because the room temperature is then simply too high for the bread to rise in a normal way.
The bread then goes onto baking paper, and then you can carefully put it in the hot pot to bake.
Then you just have to let the bread rise again for about 8 hours, and then just carefully bake it in the “caution hot!!!” cast iton pot!
You see, not that difficult! 🙂

Yogurt bread
Super crispy and tasty yogurt bread!

Ingredients
570 g | flour (type 550) |
140 ml | water (lukewarm) |
13 g | salt |
285 g | yogurt (full fat) |
0.5 g | fresh yeast (a small piece!) |
Utensils
- cast iron pot
Steps of preparation
- In a large bowl, combine the flour and salt.
Dissolve the yeast in lukewarm water and then add it to the flour.
Add the yogurt and mix everything thoroughly into a dough. - Knead the dough on a lightly floured surface until smooth and elastic. This takes about 7 minutes.
Place the dough back in the bowl, cover with a clean tea towel, or cling film, and leave to rest in a warm place for 8 hours. The dough should rise during this time. - Carefully place the risen dough onto a lightly floured surface, fold it and shape it into a round loaf
Cover again and let it rest for about 8 hours. - Preheat the oven to 250 degrees Celsius and heat a cast iron pot with a lid while the oven heats up.
As soon as the pot and the oven are hot, carefully place the dough piece first on baking paper and then into the hot pot and close the lid. - Switch the oven temperature to 230° Celsius.
- Bake the bread for 25 minutes with the lid closed.
- Remove the lid and bake the bread for another 25 minutes until it has a beautiful golden crust.
- Carefully remove the bread from the oven and let it cool on a rack
- Slice it and enjoy!
