So you did the Sheet Pan Chicken but don’t fancy a salad? But rather something a bit more substantial? Why don’t you make a super easy Chicken Sandwich? If you are like me and you do not have a sandwich grill at home just toast your flatbread/ bread in the toaster while prepping everything else. Like reheating your veggies. And making the chicken filling.
You will be surprised by the creaminess of the yoghurt and mayonnaise mixture. It just works so well. I have that trick from a friend of mine and I absolutely love it. Its just not as rich as if you only use mayo, but you still have the mayo flavor.

Super Easy Chicken Sandwich
Just a heads up: I use grams and Celsius degrees in all my recipes, as I’m based in Germany.
Ingredients
- 2 chicken breast grilled- best is leftover
- 2 tsp natural yoghurt
- 1 tsp mayonaise
- salt & pepper
- 4 leaves salad
- 1/4 cucumber in thin slices
- 1/2 tomato in thin slices
- 2 Flatbreads
Instructions
- In a small bowl, add the mayonaise, yoghurt and salt and pepper.
- Slice the leftover grilled chicken in small cubes and add the the mixtureIf you do not have leftover chicken, then pan fry the chicken breast in a pan with a bit of olive oil and let it cool down a bit befor you cut it.
- Reheat the veggies in a pan and put aside.
- In the meantime, open the flatbreads in the middle using a knife – careful! and toast the flatbreads in a toaster.
- Add the lettuce leaves on the breads and divide the chicken mayonaise between the 2 breads. Top with cucumbers and tomatoes and serve with grilled veggies on the side
