Do you actually know the American classic Red Velvet cake? Whoa is that delicious! And its actually not that difficult to make at all.

The Red Velvet Cake is a chocolate cake that is covered and filled with a layer of cream cheese frosting. You can of course also have a layer of buttercream, but I definitely prefer cream cheese.

And the color? How come is the cake red? The red-brown color of the cake is the result of a chemical reaction between the cocoa in the cake and acidic food ingredients such as buttermilk. Allegedly, the original was made with beetroot, buttermilk, flour, butter and sugar. And then sodium carbonate to get the red color.

Since chemistry is not my forte, I prefer to stick to the good classic red food coloring. And I think the result is quite impressive.

It is best to prepare your cake base the day before – then it has time to cool down completely and it is easier to cut through. However, if you have two baking molds at home, you can divide the dough on both molds and save yourself having to cut through the bases.

Oh and one more tip – please do not grease the edge of your baking pan. Then your base will rise even.

Ingredients

20 cm springform pan
Chocolate Base
250 g flour
150 g soft Butter
190 g sugar
1 packet of vanilla sugar
3 eggs
1 pinch of salt
1 tsp baking soda
2 Tbsp Cacao
150 g plain Yoghurt
1 Tbsp Cinamon
3 Tbsp RED food coloring
Cream Cheese Frosting
250 g cream cheese
150 g powdered sugar
40 g soft butter
6 drops vanilla extract

Steps of preparation

  1. Preheat the oven to 180 ° C and line the bottom of a springform pan (20 cm) with baking paper
  2. Mix the butter, sugar, salt and vanilla sugar until frothy
  3. Add one egg at a time and mix together
  4. Mix the flour with the baking powder, cinnamon and cocoa and sift it to the butter mixture.
  5. Add the yoghurt and mix everything into a smooth dough.
  6. Finally add the food coloring and mix well.
  7. Put the dough in the prepared springform pan, smooth it out and bake for about 40 minutes
  8. Please do the toothpicks test to see that your cake is baked
  9. Let the cake cool for about 15 minutes and then carefully remove it from the form and let it cool down completely on a wire rack
  10. When the cake has cooled down (preferably overnight), carefully cut the base horizontally and cut the base flat
  11. You can crumble the cake crumbs that are created in this way and use them as decoration.
  12. Beat the cream cheese with the soft butter, the vanilla extract and the powdered sugar until frothy and coat one of the bases with about a third of the mixture. Put the other base on top and coat the cake all around with the Cream Cheese Frosting.
  13. Decorate with crumbles and enjoy!
