Healthy Kale Salad with Miso dressing

I love a good healthy kale salad, especially an easy one with a miso dressing. And if its prepared in 5 minutes- even better!

It’s super healthy, and I also add some raisins and almonds for some crunch and sweetness. Sometimes I add a carrot or, if I have it, a bell pepper as well.

Currently, this is my to go to salad and I make it at least once a week. Sometimes I top it with some prawns or with my Lemon Salmon to add some proteins.

And if you do make the Kale Salad with my lemon salmon, simply prepare the salmon, place it in the oven and in the meantime you can chop your salad and finish everything. Super efficient.

But what is actually Miso Paste?

Miso is a paste made from fermented soy beans.

White Miso is also called Shiro Miso and can be made with rice or with soybeans and is only fermented for 3 months. The taste is sweet and milder than the red Miso paste.

As Miso paste is fermented, it’s wonderful for our gut health as it has so-called good bacteria in it and therefore should not be boiled.

Its taste is extremely salty and full of Umami, the 5th taste sense.

For me this Kale Salad is a taste explosion as you have the raisins for sweetness, the Miso for Umami, the lemon for sour, salt for salty and the kale is considered as bitter. All of your taste senses are triggered here and makes it a super tasty and healthy salad.

Can I prepare the Kale Salad in advance?

Of course you can!

Especially if you are looking for a healthy meal prepping idea, this salad is the perfect solution as Kale doesn’t get withered so quickly. So it can last -properly stored-for a day or two in the fridge until you need it.

And you can always vary your additional toppings, with what’s leftover in your fridge.

So if you happen to have some tofu that needs to go- add it! Or some smoked salmon, some leftover chicken. nearly everything is possible with it!

Kale salad with Miso dressing

Low carb and absolutely delicious!

Ingredients

2 servings
Salad
300 g Kale
50 g Almonds, chopped
30 g raisins
1 carrot
0.5 cucumber
Dressing
2 Tbsp white miso paste
2 Tbsp rice wine vinegar
2 Tbsp lemon juice
1 Tbsp sesame oil
3 Tbsp Olive oil
1 Tbsp Mirin
20 g ginger, grated

Utensils

  • Salad bowl

Steps of preparation

  1. Wash your Kale and remove the leaves from the stem
  2. Cut it in small pieces
  3. Peel your carrot and cut it in bite size pieces
  4. Wash and cut your cucumber
  5. In a bowl, whisk the ingredients for the dressing together.
  6. Add the Kale, carrots, cucumber, almonds, and raisins and mix everything well together.
  7. Enjoy!
