Hearty Lentil Stew with Sausages and Bacon

Nothing beats a good hearty Lentil stew with sausages and bacon in autumn/winter or any given rainy day to be precise.

If you do not like bacon or sausages, no worries, just leave it out. But please ensure to add the lovage as this will give this stew its unique taste.  I am lucky as my mom has a lovage plant on her balcony which grows like a weed, it’s absolutely crazy. But I always get some to take home and freeze, so I always have some.

The region Swabia where I am from in Germany is famous for their lentil stew with spätzle and there are a lot of variations on it! Another favorite of mine is “sour lentils with spätzle”, which are made with vinegar. 

My kids also love the lentil stew, so this is a family dinner winner for us, which I wanted to share with you.

If you do not want the bacon or sausages inside as you prefer to eat vegetarian, just leave it out and it will still be delicious.

But please make sure you do get some lovage as it gives it this yummy feeling in your belly.

It also is super easy to cook- and all those beautiful and healthy veggies will make sure it’s also so good for you and your family.

Hearty Lentil Stew with Sausages and Bacon- what shall I serve with it?

If you like to keep it low carb, just eat it as it is and you will have a fabulous dinner.

But you can also serve it with some bread, potatoes or homemade spätzle.

Lentil stew with bacon

simple but belly warming stew!

Ingredients

4 servings
250 g lentils
1 carrot
1 onion
80 g celeriac
100 g leek
20 g tomato paste
1,5 tsp salt
120 g bacon
900 ml vegetable stock
10 ml cooking oil
25 ml red wine
4 frankfurter sausages
Spices:
2 bay leaf
3 lovage
3 juniper berries
2 cloves
salt and pepper

Utensils

  • Big pot

Steps of preparation

  1. Start with cutting all vegetables in bite sizes.
  2. Bring a big pot to high heat and add the oil.
  3. Add the onions, celeriac, leek, and carrots and let it get some colour.
  4. Add the lentils and the tomato paste.
  5. Let it caramelize and then add the wine and stir occasionally for 1 minute
  6. Pour in the vegetable broth and add the bacon and spices, except the salt.
  7. Let it simmer on low heat for about 30 minutes.
  8. When the lentils are cooked, add the salt and season to taste.
  9. Add the Frankfurter sausages (Wienerle) and let it rest for 5 more minutes.
  10. Season to taste and Bon appetit!
