I absolutely love a good ramen soup! And I really don’t know anyone who doesn’t love this amazing Japanese noodle soup. And if you’re looking for a quick and easy ramen, then you should just keep on reading,
As in this blog post I will not only show you a simple Copycat Ramen soup à la Wagamama with chicken and soba noodles, but also answer some basic questions about ramen. So, let’s go!
What exactly is/are ramen soup?
It is a Japanese noodle soup that often consists of a hearty broth, noodles, and a variety of toppings. It is an important part of Japanese cuisine and has gained popularity worldwide and has become an integral part of our menu. So, I absolutely love them!
Ramen noodles are usually made from wheat flour and have a distinctive, slightly elastic texture. The broth can be based on a variety of flavours including soy, miso, shio (salt), and tonkatsu (pork bone broth). But the most famous and striking topping is definitely the waxy egg!
How healthy is ramen?
Ramen can be both healthy and not so healthy, depending on the ingredients used and preparation methods.
In my copycat ramen soup, we use chicken broth, and we basically bake the chicken in the oven without any additional fat. And then I add soba noodles here, which are made from buckwheat and are a good source of fibre and protein. So this one is healthy 😉 Which I like.
Of course, you can also spice up your soup with a variety of vegetable toppings in addition to the spring onions and sprouts, which provide additional nutrients. I like to use thin carrot slices and edamame. I just love them. By the way, you can buy these frozen in your local Asian shop. Then they are already peeled and super easy to use.
But what other ingredients do I use:
Chicken stock (if you don’t have homemade stock, you can also use stock cube stock)
chicken breasts (oven fried)
soba noodles
teaspoons Shirodashi sauce
White miso paste
Salt and pepper to taste
soy sauce to taste
Spring onions and sprouts as toppings
If you have read this far, you probably asked yourself what exactly is Shirodashi sauce? SHIRO DASHI means white dashi broth and consists of fish flakes (bonito flakes) and seaweed. In my favourite Asian supermarket they are available in powder form and I then use them like our stock cubes. The taste is spicy and umami and gives the ramen a great extra taste.
And this is my step by step instruction for the Easy Wagamama Inspired Ramen soup with chicken and soba noodles
Step 1: Preheat the oven
Set your oven to 200°C (about 400°F) and allow it to preheat while you prepare the other ingredients.
Step 2: Season the chicken
Season the chicken breasts generously with salt and pepper. Place them on a baking sheet lined with parchment paper. Roast in the oven for approximately 20 minutes or until cooked through and golden.
Step 3: Prepare the broth
While the chicken is roasting, heat 500 ml of chicken broth in a pot. Add 1 tablespoon of white miso paste and 2 teaspoons of Shirobashi sauce to the broth. Stir gently until the miso paste is completely dissolved. For extra flavor, add soy sauce to taste.
Step 4: Cook the soba noodles
In a separate pot, cook 200 g of soba noodles in boiling water according to the package instructions. Once the noodles are cooked, drain them well and divide them into two bowls.
Step 5: Slice the roasted chicken
Once the chicken is fully cooked, remove it from the oven and allow it to cool slightly. Slice the chicken breasts into thin pieces.
Step 6: Assemble the soup
Pour the hot broth over the soba noodles in each bowl. Top the noodles with the sliced chicken.
Step 7: Garnish and serve
Garnish your soup with fresh green onions and sprouts. Add additional soy sauce, salt, and pepper to taste.
Well, with these ingredients, you can prepare a delicious Japanese noodle soup in less than 30 minutes! So I love it! the ideal winter warmer 😉

Ingredients
500 ml | chicken broth |
200 g | soba noodles |
2 | teaspoons Shirobashi sauce |
1 | tablespoon white miso paste |
Salt and pepper to taste | |
Soy sauce to taste- 1 use 2 Tbsp | |
Green onions and sprouts as toppings | |
2 | chicken breasts |
Steps of preparation
- Preheat the oven to 200°C.
- Season the chicken with salt and pepper, place it on a baking sheet lined with parchment paper, and cook in the oven for about 20 minutes.
- Meanwhile
Heat the chicken broth in a pot and add the miso paste and Shirobashi sauce. - Stir until the miso paste has dissolved. Season with a little soy sauce.
- Cook the soba noodles in boiling water according to the package instructions. Drain and set aside in 2 bowls.
- Carefully remove the chicken from the oven and slice the roasted chicken breasts.
- Pour the hot broth over the prepared soba noodles.
- Garnish with the chicken slices, green onions, and sprouts.
Season with soy sauce, salt, and pepper to taste.
