Are you looking for an easy chocolate muffin recipe? Then I have something for you here.
This is my basic muffin recipe after I have been making muffins for years now. And they can do without any oil at all.
I have to admit though, my brother gave me this recipe years ago. And since then I’ve only made them according to this basic recipe.
And baking muffins is really easy, but I have listed my favourite tip for fluffy and even muffins
My tip for even baked muffins:
Get an ice cream scoop!
Simply amazing what such a small kitchen tool can do! If you use it as a dough scooper, this has several advantages. Let me tell you a bit more about them:
- clean workspace
- evenly sized muffins
- speed
Because you work with an ice cream scoop, you don’t spill as much and your work surface stays clean… for someone who simply doesn’t have the best motor skills like me, it’s just the solution!

With the ice cream scoop, your muffins will be evenly sized.
This little hack also makes them more even and, above all, the same size. And you do not need to have a good sense of proportion for this. Love it.
And what’s also not to be scoffed at, you’ll just get done so much faster! Which is especially helpful when things have to be done in a hurry. Because someone simply forgot to tell you that you should bring something baked to school, work, kindergarten etc. literally tomorrow.
So, as you can see, working with an ice cream scoop clearly has quite a few advantages here.
And if you want it even a tad more chocolatey, simply add a spoonful of cocoa powder.
And if you’re looking for a quick cake, check out my delicious German marble cake. The dough is prepared in the same time it takes the oven to preheat.
Have fun and happy baking!
